PANCETTA ARROTOLATA (BACON ROLL)

Made with lean rindless pork belly. It is salted, seasoned with back pepper and garlic. After about a week, it is washed in an abundant quantity of white wine, rolled and packed in natural casings, dried, and then cured at length. The result is an aromatic product that can be eaten raw as a cold cut, or used in cooking.
